Shaking and turning
Shake the basket every 5 minutes or so, or at least once halfway through, so the chips at the bottom get their turn near the heat.
How to tell it's done
Golden and crisp at the edges, soft in the middle, and steaming hot all the way through. The Food Standards Agency suggests aiming for golden yellow rather than dark brown when cooking potatoes.
What goes wrong
- Soggy chips usually means too many in the basket. One layer, or close to it, works best.
- Thin fries cook much faster than chunky chips. Check thin ones from about half the converted time.
- Oven chips are already coated in oil, so they don't need more.
